Cauliflower Pickle

Ingredients

Cauliflowers
- 2
•
Lemons
- 3
•
Oil
- 2 ½ tablespoons
•
Salt
- as required
•
Chilly powder
- as required
•
Fenugreek powder
- 1 ½ teaspoons
•
Mustard seeds
- ¼ teaspoon
•
Asafoetida powder
- a little
Method
1. Dry
roast
fenugreek
till golden brown.
Powder
it in a mixie and then sieve using fine mesh.
2.
Cut
cauliflower
into small flowerettes,
wash
well.
3.
Keep
immersed in
water
to which
salt
is added for 10 minutes.
Drain
water
completely.
4.
Spread
it over a towel to
remove
excess moisture.
5.
Heat
oil
in a deep curved pan,
add
mustard
,
asafoetida
and then
cauliflower
pieces .
6.
Fry
for 2 to 3 minutes.
Add
salt
,
chilly powder
and
fry
for another one minute.
7. Just before
removing
from fire
add
fenugreek powder
.
8. Squeeze
lemon
juice and
mix
well.
