Carrot Rice

Ingredients

Rice
- 1 cup

Carrots
- 3
•
Onions
- 2
•
Peanuts (roasted)
- 2 ½ tablespoons

Oil
- 2 tablespoons
•
Salt
- as required
•
Cinnamon
- 1 inch
•
Cloves
- 3
Ingredients For Masala Powder
•
Coriander seeds
- 1 ½ teaspoons
•
Cumin seeds
- ¾ teaspoon
•
Red chillies
- 4
•
Coconut (grated, dry)
- 2 tablespoons
Ingredients For Garnishing
•
Almonds (roasted)
- 5 tablespoons
•
Raisins
- 2 tablespoons
Method
1.
Cut
onions
into small pieces.
2. Blanch whole
carrots
in
boiling
water
for two to three minutes and then
grate
it.
3.
Cook
rice
, allow it to cool and separate the grains.
4.
Heat
oil
,
fry
cinnamon
,
clove
and
onions
.
5.
Fry
till it becomes transparent.
6.
Add
grated
carrots
,
fry
till the raw smell goes.
7. Sprinkle
water
if necessary.
8.
Add
rice
,
salt
, powdered
spices
and
fry
over a high flame for few minutes.
9.
Add
powdered
peanuts
before
removing
from fire.
10.
Mix
well and
serve
.
11.
Heat
a Teaspoon of
oil
fry
the above
ingredients
, finally
add
coconut
fry
till brown and
powder
.
12. Garnish with
almonds
and
raisins
before
serving
any pulao.
