Carrot Raita

Ingredients

• • Curd - 1 cup
• • Carrots (grated) - ¾ cup
• • Green chillies - 2
• • Salt - as required
• • Coriander leaves (chopped) - 1 tablespoon

Ingredients For Seasoning

• • Oil - 1 teaspoon
• • Cumin seeds - ½ teaspoon
• • Mustard seeds - ½ teaspoon
• • Urad dal - ½ teaspoon
• • Curry leaves - a little
• • Red chilly (broken, dry) - 1
• • Ginger (grated) - ½ teaspoon

Method

• 1. Peel, wash and grate carrot, finely chop green chilly, coriander leaves.
• 2. In a bowl beat curd well, add carrot, chilly, salt and mix well.
• 3. In a small pan add all the items listed under 'For Seasoning' and allow cumin, mustard seeds seeds to splutter, urad dal to become light brown, off flame.
• 4. Pour tempering over raita and give a gentle mix, serve immediately or chill until ready to serve.
