Carrot Phirni

Ingredients

• • Milk - 1 liter
• • Carrots (grated) - 1 ½ cups
• • Sugar - ¾ cup
• • Rawa - 3 tablespoons
• • Cashew nut powder - 1 tablespoon
• • Saffron - a little

Method

• 1. Cook carrots in milk till it becomes soft.
• 2. Add sugar and stir till it is dissolved.
• 3. Sprinkle rawa to the milk stirring constantly without forming lumps.
• 4. Add cashew nut powder and cook till mixture becomes thick.
• 5. Crush saffron in warm milk and mix with phirni before removing from fire.
• 6. Serve cold in small individual cups.

Method To Serve

• 1. Traditionally Phirni is served in small mud pots as it has natural cooling effect.
