Caribbean Chicken

Ingredients
•
Chicken (cut into 8 pieces)
- 800 grams
•
Onions (sliced)
- 2
•
Oil
- 2 teaspoons
•
Garlic paste
- 2 teaspoons
•
Soya sauce
- 4 tablespoons
•
Salt
- 1 teaspoon
•
Red chilly powder
- 1 teaspoon
•
Tomatoes (large)
- 4
•
Coriander leaves (for garnishing)
- a little
Method
1. Puree
tomatoes
in the mixer to
get
tomato
puree.
2. In a non stick pan
heat
oil
.
Add
onion
. Saute till light pink.
3.
Add
chicken
.
Fry
till
chicken
changes colour and is no longer pink.
4.
Add
garlic paste
.
Fry
for 1 minute.
5.
Add
salt
,
red chilly powder
and
tomato
puree.
6.
Cover
and
cook
on low
heat
for 6-7 minutes or till
chicken
is tender.
7. Increase
heat
and
cook
till
sauce
thickens.
8.
Serve
hot, sprinkled with fresh
coriander leaves
.
