Caramel Custard

Ingredients

Milk (thick)
- 3 cups
•
Eggs
- 2
•
Sugar
- 3 tablespoons
•
Vanilla essence
- few drops
•
Custard powder
- 1 ½ tablespoons
Ingredients For Caramel
•
Sugar
- 1 ¼ tablespoons
•
Lemon juice
- ½ teaspoon
•
Water
- 2 tablespoons
Method
1. Beat
eggs
.
Heat
milk
in a heavy vessel.
2. When it starts
boiling
add
sugar
and
stir
till dissolved.
3.
Mix
custard powder
in little cold
milk
and
add
it to
boiling
milk
.
4. Now
reduce
flame and
mix
beaten
eggs
, while
stirring
the
milk
constantly.
5. When it becomes thick,
remove
from fire.
Add
essence
and
mix
well.
6.
Mix
sugar
and
lemon juice
in a pudding mould.
7.
Heat
till
sugar
changes into golden brown.
8.
Add
water
and
stir
till
sugar
dissolves completely.
9.
Remove
from fire, when caramel becomes thick like honey.
10. Tilt the caramel syrup in the vessel till it is coated complete bottom of the vessel.
11. Allow it to cool.
Pour
custard
on this carefully.
12. Steam in pressure cooker for half an hour.
13. Or
bake
in oven by
keeping
pudding mould in
water
.
14.
Keep
in Refrigerator till it becomes cold.
15. While
serving
, turn the mould upside down so that caramel coating comes on top.
