Capsicum Rice

Ingredients
•
Plain rice
- 1 cup
•
Capsicums
- 4
•
Lemon
- 1
•
Coconut (grated, dry)
- 1 ½ tablespoons
•
Turmeric powder
- ¼ teaspoon
•
Oil
- 3 tablespoons
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Black gram dal
- 1 teaspoon
•
Bengal gram dal
- 2 teaspoons
•
Red chillies
- 2
•
Curry leaves
- few
•
Cashew nuts
- 8
•
Pea nuts (roasted)
- 1 tablespoon
Ingredients For Masala Powder
•
Red chillies
- 6
•
Cinnamon
- 1 inch
•
Coriander seeds
- 2 teaspoons
•
Cumin seeds
- ½ teaspoon
•
Black gram dal
- 1 ½ teaspoons
•
Bengal gram dal
- 1 ½ teaspoons
Method
1.
Cook
rice
in
boiling
water
till tender and three fourth cooked.
2.
Drain
the
water
and allow it to cool by
spreading
over a broad plate.
3. Each grain should remain separate.
4. If
cooking
in pressure cooker
add
two cups of
water
for one cup
rice
.
5. Cool thoroughly and separate the grains.
6.
Mix
a teaspoon of
oil
or ghee to that.
7.
Heat
oil
.
8.
Add
seasonings
one by one and
fry
till golden brown in colour.
9.
Add
diced
capsicums
and
fry
till it becomes soft.
10.
Reduce
the flame and
add
grated dry
coconut
.
11.
Fry
till light brown
add
turmeric powder
and
salt
.
12.
Add
cooked
rice
to this and
fry
for few minutes till
rice
becomes hot.
13. Squeeze
lemon
juice and
add
powdered
masala
.
14.
Mix
well and garnish with
cut
coriander
leaves
.
