Butter Badhusha

Ingredients
•
Maida
- 2 cups
•
Cooking soda
- a pinch
•
Kesar yellow colours
- a pinch
•
Saffron
- a little
•
Cardamom powder
- ½ teaspoon
•
Butter
- ½ cup
•
Ghee (for deep frying)
- as required
•
Sugar
- 1 ½ cups
•
Water
- ¾ cup
Method
1. Sieve
maida
,
soda
together twice.
2.
Add
colour
, crushed
saffron
,
cardamom powder
and soft
butter
to the flour and
mix
with finger tips till it blends properly.
3. Sprinkle
water
and knead to a stiff dough. (Dough should not
break
while
making
balls).
4.
Make
medium sized balls, flatten and press in the centre.
5. Deep
fry
in moderate hot
ghee
few pieces at a time in reduced flame.
6. Turn once and
cook
till crisp and golden without disturbing it while
frying
.
7.
Prepare
sugar
syrup of one string consistency.
8.
Dip
the fried badhushas in hot syrup and arrange on a flat plate.
9. Decorate with sliced nuts or coloured desiccated coconut before it dries up.
