Bhuni Kaleji - Liver

Ingredients
•
Lamb liver
- 250 grams
•
Onion (prepare: ground to a paste)
- 1
•
Garlic paste
- 1 teaspoon
•
Ginger paste
- 1 teaspoon
•
Tomato (chopped)
- 1
•
Worcestershire sauce
- 1 teaspoon
•
Tomato sauce
- 1 teaspoon
•
Pepper
- as required
•
Salt
- as required
•
Oil
- 4 tablespoons
Method
1.
Heat
oil
in a pan.
2.
Add
onion
paste
and
stir
fry
on medium
heat
till golden.
3.
Add
ginger
-
garlic paste
,
stir
for a few seconds.
4.
Add
chopped
tomato
and
cook
till soft and
oil
separates.
5.
Add
liver
.
6.
Cover
the pan and
stir
fry
on low flame for 2 minutes only. (Do not pressure
cook
the
liver
or
cook
for long time as
liver
hardens on pressure
cooking
).
7.
Add
both
sauces
,
salt
and
pepper
.
8.
Mix
well and turn off the
heat
.
9. For breakfast
serve
with french fries, sauteed
tomatoes
and toasted triangles.
10. For cocktail snacks, dry the
liver
a little more till the
masala
coats the
liver
&
serve
on tooth picks.
