Bhindi Raita

Ingredients

• • Bhindis/Okras - 25
• • Green chillies - 2
• • Oil - 2 teaspoons
• • Curd - 1 cup
• • Salt - as required

Ingredients For Seasoning

• • Oil - 1 teaspoon
• • Cumin seeds - ½ teaspoon
• • Mustard seeds - ½ teaspoon
• • Urad dal - 1 teaspoon
• • Red chilly (dry) - 1
• • Curry leaves - 6
• • Water - 3 ½ cups

Method

• 1. Wash, pat dry well and chop okra in small pieces, finely chop green chillies.
• 2. In a pan or wok heat oil add okra, green chilly and cook in medium flame until okra becomes crispy stir regularly.
• 3. To prepare tempering heat oil in a small pan or add cumin, mustard seeds and allow to splutter.
• 4. Add urad dal, curry leaves, dry red chilly and saute until dal becomes golden brown, off flame.
• 5. In a bowl beat curd add salt, cooked okra and mix well.
• 6. Add prepared tampering on top.
