Bhapa Sandesh - Steamed Sandesh

Ingredients
•
Full fat milk
- 1 liter
•
Sugar
- 3 tablespoons
•
Lemon juice or vinegar
- ¼ cup
•
Cardamom powder
- ¼ teaspoon
•
Saffron/Kesar
- 10 strands
•
Warm milk
- 1 tablespoon
•
Pistachios
- 12
Method
1.
Heat
the
milk
in a non stick saucepan and when it comes to a
boil
,
add
the lemon juice and
stir
till the
milk
curdles.
2.
Strain
and put the chhenna (home made cheese) through a muslin or cotton kerchief and squeeze till all the
water
is drained out.
3.
Mix
the
saffron
in one tablespoon of
warm milk
and
keep
aside.
4.
Add
sugar
, green
cardamom powder
and
saffron
milk
with the chhenna and kneed well.
5. Steam the
mixture
in a steamer for ten minutes.
6. Take the
mixture
out from the steamer and when it is slightly cooled kneed it well.
7.
Spread
the
mix
in a tray evenly into a half inch thick sheet and
cut
it into equal square or diamond shaped pieces.
8. Garnish the pieces with
pistachios
and
serve
.
