Baked Chicken With Spinach

Ingredients
•
Boneless chicken
- 300 grams
•
Oil
- 1 teaspoon
•
Garlic paste
- 1 teaspoon
•
Onion (chopped)
- 1
•
Tomatoes
- 4
•
Salt
- 2 teaspoons
•
Red chilly powder
- 1 teaspoon
•
Tomato puree
- ½ cup
•
Spinaches/Palak (finely chopped)
- 6 cups
•
Bread crumb powder (dry)
- some
Method
1.
Boil
or steam
chicken
. Cool and shred into small pieces.
2.
Chop
&
puree
tomatoes
in a mixer.
3. In a pan,
add
chopped
onion
, pureed
tomatoes
, 1 Teaspoon
salt
,
red chillies
and
tomato puree
. Give 2-3 boils.
4.
Add
shredded
chicken
.
Mix
well. Give a few boils till nearly dry.
5.
Heat
1 Teaspoon
oil
in a nonstick pan.
Add
garlic
and
fry
for 1-2 minutes.
6.
Add
spinach
, ¾ Teaspoon
salt
, ¾ Teaspoon
pepper
.
7.
Cook
on high
heat
till
spinach
is reduced and all the
water
has evaporated.
8. Take a
baking
dish.
Spread
spinach
at the bottom.
9.
Pour
prepared
chicken
&
spread
to form a
layer
on top of
spinach
.
10. Sprinkle
bread crumbs
on top.
11. Decorate with sliced
tomato
wedges &
bake
in a preheated oven at 150°C for 20 minutes.
Note
• Instead of
chicken
, boiled mutton mince (keema) or
fish
can also be used.
