Ingredients

New rice
- 1 cup

Salt
- ½ teaspoon

Milk
- 10 cups
•
Curd
- 1 cup
Ingredients For Seasoning

Mustard seeds
- ½ teaspoon
•
Black gram dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
•
Green chillies (slit)
- 2
Ingredients For Garnishing
•
Coriander leaves
- a few
•
Curry leaves
- 1 sprig
•
Ginger (julienned)
- 1 teaspoon
•
Mango pieces (raw)
- a few
(optional)
•
Grapes
- a few
(optional)
•
Carrots (grated)
- a few
(optional)
•
Cucumbers (diced)
- a few
(optional)
•
Raisins (fried)
- 1 teaspoon
(optional)
Method
1.
Boil
milk
in a heavy bronze vessel.
2. When it starts
boiling
reduce
flame and
add
washed
rice
. (Do not
soak
).
3.
Keep
stirring
constantly in medium flame till
rice
is cooked soft. (
Keep
one or two cups of hot
milk
separately).
4. If the pongal thickness before the
rice
becomes soft,
add
hot
milk
and continue
cooking
.
5. When the pongal is thick enough
remove
from fire and
add
powdered
salt
.
6. Allow it to cool completely.
7. Season with
Mustard seeds
,
black gram dal
,
bengal gram dal
and slit
green chillies
.
8.
Add
enough
salt
and one cup of fresh thick
curds
.
9.
Mix
well garnish with
cut
coriander leaves
.
10.
Serve
immediately.
11. Finely
cut
ginger
,
curry leaves
and raw
mango pieces
can be added as per
taste
, or sweet green
grapes
, grated
carrots
, diced
cucumber
with fried
raisins
can be added.
