Avocado Mango Salad

Ingredients

Lime juice
- 1 tablespoon

Sesame oil
- 1 tablespoon

Honey
- 1 tablespoon
•
Soy sauce
- ½ tablespoon
•
Chilly sauce
- 1 teaspoon
•
Mangoes (cut into pieces)
- 1 cup
•
Red pepper (cut into long strips)
- 1 cup
•
Green pepper (cut into long strips)
- 1 cup
•
Avocados (diced)
- 1 cup
•
Cashew nuts (cut into small pieces & roasted)
- ¼ cup
•
Coriander leaves (fresh)
- ¼ cup
Method
1. In a bowl,
add
lime juice
,
sesame oil
,
honey
,
soy sauce
, and
chilly sauce
.
2. Using a
whisk
,
stir
until combined and
oil
no longer separates. Set aside.
3. To a medium bowl,
add
mango
,
red pepper
,
green pepper
,
avocado
,
cashew nuts
, and fresh
coriander leaves
.
4.
Pour
the
sauce
over the
mango
salad and gently
toss
using two spoons.
5.
Serve
immediately.
