Araichu Vitta Sambar

Ingredients
•
Drumsticks (cut into 2½ inch pieces)
- 4

Thuar dal
- ½ cup
•
Tamarind
- small lemon size
•
Salt
- as required
•
Curry leaves
- as required
•
Coriander leaves
- as required
•
Turmeric powder
- ¼ teaspoon
Ingredients For Grinding Together
•
Coriander seeds
- 1 tablespoon
•
Red chillies
- 8
•
Bengal gram dal
- 2 teaspoons
•
Fenugreek
- ¼ teaspoon
•
Coconut (grated, fresh)
- ¼ cup
Ingredients For Seasoning
•
Gingelly oil
- 2 teaspoons
•
Mustard seeds
- ¼ teaspoon
•
Asafoetidas
- a pinch
Method
1.
Fry
"For
Grinding
together"
spices
in little
oil
and then
grind
with ¼ cup grated fresh
coconut
.
2. Pressure
cook
dal
in enough
water
with
turmeric powder
. Allow to cool, and
mash
well.
3.
Soak
tamarind
in
water
for ½ an hour and squeeze out extract.
Strain
well .
4.
Cook
drumsticks
in enough
water
till it becomes soft.
5.
Add
tamarind
extract,
salt
,
ground paste
, mashed
dal
and
cook
till thick.
6.
Fry
seasoning
in
oil
and
mix
with Sambar.
7. Garnish with
coriander leaves
,
curry leaves
and
serve
hot with cooked rice.
Variations
• Use small onions or diced big onions along with the
vegetable
.
Note - Other Suggested Vegetables
• Brinjal, ladies finger:
Fry
in
oil
for few minutes.
Cook
in
tamarind
extract, then
add
dal
and
ground paste
.
• Carrot, chow-chow, radish etc.
Cut
into thin slices - steam
cook
in pressure cooker.
• Yellow pumpkin, white pumpkin, bottle gourd,
vegetable
marrow etc.
Cook
in
water
or
tamarind
extract and then
make
Sambar.
