Andhra Kovaikai Pickle

Ingredients

Kovaikai (dondakaya)
- ½ kg
•
Lemons
- 12
•
Salt (powdered)
- 2 tablespoons
•
Turmeric powder
- 1 ½ teaspoons
•
Chilly powder
- 2 tablespoons
•
Garlic flakes (peeled, crush coarsely)
- 10
•
Fenugreek powder
- 1 ½ teaspoons
•
Mustard powder
- 1 ½ teaspoons
•
Sesame oil
- ¼ kg
Method
1.
Wash
kovaikai
,
spread
on a cloth to dry up excess moisture.
2.
Cut
the ends and then into 4 pieces length wise.
3. Discard over ripe and soft ones.
4. Squeeze
lemon
,
strain
and
keep
aside.
5.
Mix
the
cut
kovaikai
with
salt
,
turmeric powder
,
chilly powder
, crushed
garlic
,
lemon
juice,
mustard powder
and
fenugreek powder
.
6.
Pour
raw
sesame oil
and
mix
well.
7.
Mix
daily once until it is soaked well.
8. Pickle gets ready in 10 days.
9.
Store
it in a dry bottle.
