Ingredients
•
Mango pieces (cut with seed)
- 4 cups
•
Salt (powdered)
- 1 cup
•
Red chilly powder
- 1 cup
•
Garlic (peeled)
- 50 grams
•
Ginger
- 50 grams
•
Mustard powder
- 1 tablespoon
•
Gingili oil
- 1 cup
•
Fenugreek
- 25 grams
Method
1. Select thin skinned sour
mangoes
.
Cut
into big pieces with inner
seed
.
2.
Wash
well and
spread
over a cloth to dry up moisture. (At least 4 hours)
3. Pound
ginger
and
garlic
coarsely.
4.
Heat
oil
and allow to cool.
5.
Mix
salt
,
Red Chilly powder
,
mustard powder
,
fenugreek
together.
6.
Add
cooled
oil
and
ginger
-
garlic
paste
to this
powder
and
blend
properly.
Mix
this with
mango pieces
and
store
it in a dry jar.
7.
Mix
well daily once for 10 days.
8.
Mix
atleast once in three days.
9. Pickle gets ready to
serve
in 10 to 12 days time.
