Achaari Chicken

Ingredients
•
Chicken (cut into 8 pieces)
- 800 grams
•
Onions (large, grated)
- 2
•
Garlic (chopped finely)
- 8 flakes
•
Ginger (chopped finely)
- 2 inch pieces
•
Green chillies
- 4
•
Saunfs/Aniseeds (roughly powdered)
- 1 ½ teaspoons
•
Jeera/Cumin seeds (roughly powdered)
- 1 teaspoon
•
Methi danas/Fenugreek seeds
- ¼ teaspoon
•
Chilly powder
- 2 teaspoons
•
Haldi powder/Turmeric powder
- ½ teaspoon
•
Hings
- ¼ teaspoon
•
Salt
- as required
•
Mustard oil
- ½ cup
•
Lemon juice
- ¼ cup
•
Coriander seeds/Dhania powder
- ¾ teaspoon
Method
1.
Mix
¼ Teaspoon
salt
and ¾ Teaspoon
dhania powder
.
2.
Make
1 inch slit length ways in the
green chillies
. Stuff slit
green chillies
with it.
3.
Heat
oil
&
fry
the
chillies
.
Strain
and
soak
the fried
chillies
in 2 Tablespoon of
lemon juice
.
4.
Keep
aside for
garnishing
.
5. In the same
oil
fry
the
chicken
pieces till golden brown.
Remove
from
oil
.
6. In the same
oil
,
add
hing
,
stir
and
add
the
onions
.
Cook
till golden brown.
7.
Add
garlic
and
ginger
and
stir
for a few seconds.
8.
Add
saunf
,
jeera
&
methi dana
.
9.
Add
the fried
chicken
pieces,
salt
,
haldi
,
chilly powder
and
stir
for a few seconds.
10.
Add
½ cup of
water
to the
chicken
.
Boil
.
Reduce
heat
and
cover
and
cook
the
chicken
until absolutely tender.
11.
Remove
lid,
add
the
lemon juice
spoon by spoon,
stirring
continuously until the
masala
is dry and coats the
chicken
pieces.
12. Garnish with pickled
green chillies
.
Serve
hot.
