Aam Ka Chundha - Gujarati Sweet Pickle

Ingredients
•
Mangoes (grated)
- 3 cups
•
Salt
- 1 tablespoon
•
Turmeric powder
- 1 teaspoon
•
Sugar
- 6 cups
•
Red chilly powder
- 1 tablespoon
•
Asafoetida powder
- ¼ teaspoon
•
Cumin seeds
- 1 teaspoon
Method
1. Select big pickle
mango
.
Wash
and
spread
over a cloth to dry up excess moisture.
2.
Scrape
outer skin of
mango
and
grate
it using big eyed steel grater.
3.
Add
salt
and
turmeric powder
.
Mix
well, close with a lid and
keep
aside for ½ an hour.
4.
Add
sugar
and
mix
well.
5. Put it in a jar and tie with a thin cloth on top.
Keep
under hot sun every day for 20 days.
6.
Stir
well before and after
keeping
under hot sun.
Sugar
should dissolve completely.
7. Generally for these type of sweet pickles ants come easily. To prevent that,
pour
water
in a broad bowl,
keep
the jar in it and
keep
under the sun. (
Keep
like this in the house also)
8.
Sugar
dissolves completely in twenty days.
9. Dry
roast
cumin seeds
and pound coarsely.
10.
Mix
red chilly powder
,
asafoetida
,
cumin seeds
powder
with pickle and
mix
well. Tie with a clean cloth on top of the jar. (This process is done only after
sugar
dissolves completely)
Note
•
Add
sugar
less or more according to the sourness of the
mangoes
.
