Aam Ka Achar

Ingredients
•
Mango pieces (diced)
- 4 cups
•
Mango (grated)
- 1
•
Turmeric powder
- 1 teaspoon
•
Salt
- ¾ cup
•
Chilly powder
- 1 cup
•
Yellow mustard
- 100 grams
•
Oil
- 1 cup
Ingredients For Seasoning
•
Aniseeds
- 1 teaspoon
•
Kalonjis
- 1 teaspoon
•
Fenugreek
- 1 teaspoon
•
Mustard
- 1 teaspoon
•
Asafoetida powder
- 1 teaspoon
Method
1. Select sour
mangoes
,
wash
, wipe, dry well and then
dice
into 1½ inch square pieces.
2.
Add
turmeric powder
,
salt
,
chilly powder
, and
mustard
. Shake well and close with a lid.
3. Shake well 6 or 7 times for one whole day.
4. Next day,
heat
little
oil
,
add
seasonings
and
pour
on top of the pickle.
5.
Heat
remaining
oil
, allow to cool, and then
mix
with the pickle.
6.
Oil
should be above the pickle
level
in the bottle, so that the pickle stays long.
7.
Mix
daily twice, until it gets ready to
serve
. (Approximately 15 to 20 days)
Variation
•
Add
1 cup diced
mango
with 1 cup bengal gram
dal
,
salt
and
turmeric powder
.
•
Soak
it for 1 day. Next day
add
chilly powder
and
prepare
seasoning
as mentioned above.
