Colocaesia Curry

Ingredients
•
Colocaesia/Yam
- ½ kg
•
Salt
- as required
•
Turmeric powder
- ¼ teaspoon
•
Oil (for frying)
- as required
•
Garlic chilly powder
- ¼ teaspoon
•
Tamarind extract
- a little
(optional)
Method
1.
Wash
and
cut
colocaesia
into 2 or 3 pieces depending upon its size.
2.
Add
enough
water
,
salt
,
turmeric
,
tamarind
and pressure
cook
till one whistle. (Till the outer skin can be peeled easily)
3.
Peel
outer skin.
4.
Heat
oil
in a
frying
pan and
fry
yam
pieces for 5 to 10 minutes.
5. Sprinkle very little
tamarind extract
. (optional)
6.
Add
salt
,
garlic chilly powder
and
fry
for 1 or 2 minutes.
7.
Serve
with plain white rice and ghee.
Note - To Make Crisp Colocaesia
•
Boil
as mentioned in the above recipe.
• Deep
fry
cooked
yam
pieces in hot
oil
till golden brown and crisp.
• Sprinkle with
salt
,
chilly
powder
and
serve
immediately.
